Spelt is an ancient grain that makes excellent sourdough bread. Its history dates back some 9000 years and was a staple food in Stone Age Britain.
This loaf has a nutty and sweet flavour, a golden burnished crust and a close textured crumb. Makes delicious toast.
It is an excellent source of dietary fiber and vitamin b and low on the GI index so doesnt cause blood sugar to spike. Also, the lower gluten content makes spelt easier to digest than conventional wheat so might be a good option for those with intolerances.
